I am so excited that my sister, Charlene, has found this recipe for low carb bread with yeast and it tastes like the real stuff. And, it’s only 2 net carbs per slice!

I was skeptical at first but when she showed me her pics, it looked so yummy, like the real thing that I had to try it. And I gotta tell you, it really is bread. And now, the possibilities are endless!

I can have Keto tuna sandwiches, Keto ham and cheese sandwiches, Keto French Toast and Keto cinnamon rolls!

This keto bread is very filling so you might want to eat just half of a sandwich at mealtime. This will go very well with my Intermittent Fasting For Weight Loss Plan if you’re doing it with Keto. You can even have it with the regular IF plan with moderation.

Charlene kneads hers all by hand and they look amazing but as for me, I don’t have time. So I inquired with friends to see if they have a bread maker they are not using and I ended up buying one for $40! It doesn’t put out the best looking loaf but it’ll do.

Recipe For Low Carb Bread With Yeast

Make sure you plan this ahead and place everything out on the counter early to get the ingredients at room temperature including the eggs. Also, flax meal can get rancid fast, so once you open the bag, keep it refrigerated. Make sure you measure what you need and place it out on the counter as well to get to room temperature.

Ingredients

1 C. Water (warmed in the microwave for 30 seconds)

2 Eggs, slightly beaten

2/3 C. Ground Golden flax meal

1/2 C. Oat Fiber

1 1/4 C Vital Wheat Gluten

2 Tbsp. Soften butter (grass-fed)

4 Tbsp. Lakanto Powdered Monkfruit sweetener

1 tsp. Pink Himalayan Salt

1/2 tsp. Xanthum gum

1 tsp. Honey (raw)

1 Tbsp. yeast

Instructions with a bread maker

Take the loaf pan out of the bread machine and place it on the counter. Make sure you measure the ingredients without packing them in your measuring cup or spoon. These are all level measurements.

Add the ingredients in the order they are shown in the ingredients list up top in the loaf pan. Before you put the yeast in, make a small well in the center then add the yeast.

Note about the yeast: I bought yeast in envelopes, they come in 3. One package does not equal to 1 Tablespoon. I add 2 envelopes to mine and the bread comes out perfect.

Place the loaf pan in the bread machine and turn it on. It’ll take about 3 hours.

Once it’s done take it out of the loaf pan to cool on a rack.

Charlene’s way

Making bread by hand kneading is not the easiest thing to do, she doubles the recipe to knead at once then splits them into two loaf pans. Her directions here are for one loaf pan so you may want to double it as well.

Melt the butter and set aside to cool.

Mix the warm water (I use tap water until its very warm) with the honey in a small bowl until honey is dissolved. Then stir in the yeast. Put in the microwave (DO NOT turn the microwave on) to keep it warm. While yeast is proofing continue with the rest of the recipe.

Butter the loaf pan then set aside.

Mix all remaining dry ingredients together until thoroughly combined.

Then in a large bowl slightly beat the eggs then add the cooled butter to the eggs while whisking. Then add the yeast mixture.

Add the combined dry ingredients (about a third of the mixture at a time) to the wet ingredients and mix well in between additions. It will turn into a dough.

Keep about 1/2 cup of oat fiber ready to dust the counter and your fingers as you knead.

Turn mixture onto a floured (oat fiber) counter and knead the dough for about 10 minutes. It will be very sticky at first so add just enough oat fiber on the dough to keep it from being really sticky. Do not add more than the 1/2 cup oat fiber or it will be too dry even if it remains a bit sticky.

Depending on conditions of your kitchen you may or may not use all of the extra oat fiber. Even if the dough is still a bit sticky keep kneading until it is tacky but not sticky ( in other words you can press your fingers in without dough sticking to your fingers). The dough should be pliable at this time.

How to knead: I fold the dough over with my fingers and push in with my palms. You have to work somewhat vigorously but not so much that you can’t keep it up for 10 minutes. Just keep folding and pushing until the dough is pliable and tacky but not sticky.

Once the dough is ready, form into a loaf, roughly the shape of your pan. Make it somewhat uniform so the bread looks pretty in the end.

Spray plastic wrap with avocado oil spray then cover the pan with the plastic wrap. Cover it very loosely. Remember the bread is going to rise.

Put a cup of water in the microwave for about 2 minutes. Then place the bread pan in the microwave with the cup of water. DO NOT TURN ON MICROWAVE. This is just creating a warm humid environment to help give the bread a better rise. The dough should more than double the size.

When the dough is done rising. Boil some water enough to fill a shallow pan half full. Place the shallow pan of water on the bottom rack of the oven.

Preheat oven to 375 degrees. Once the oven has preheated place the bread pan on the middle rack and bake for approximately 25-30 minutes.

Remove from pan and let cool on a wire rack for at least 30 minutes before slicing it. Bread freezes very well.

How To Store

Since this bread is homemade, it does not have any preservatives so you’ll need to store some in the freezer. Unless you have a big family and plan to eat it within 2 days.

To freeze, slice the loaf first then place in plastic wrap then in a freezer storage bag. I’ll wrap 2 slices in one plastic wrap for a single serving. You can put them in the toaster right out of the freezer.

Same kneading method as bread but after the bread has been kneaded, roll the dough out into a rectangle approximately 1/4 inch thick.

Brush dough with melted butter leaving about 1 inch unbuttered on one long edge to seal bread.

Then add cinnamon mixed with granulated Lakanto Classic Monkfruit sweetener to taste and sprinkle over the buttered dough. Add nuts if desired.

Then roll into a log and slice into 16 slices with sharp knife or string.
