These Breakfast Pigs in a Blanket are the perfect combination of the best breakfast foods! These are classic breakfast things that kids and adults love and really a perfect comfort meal.

All you have to do is make your favorite sausage links, pancakes and roll everything together so it’s all held in place, serve with some syrup or toppings of choice and you’re good to go!

This is a traditional Minnesota dish, we grew up on it and it is still served in our small town cafes today. Honestly it is the perfect pairing of foods that you just can’t get enough.

When you think of Pigs in a Blanket you are most likely thinking about the traditional recipe with little smokies and crescent rolls. But here it was always known as that name.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)

Breakfast sausage links
All-purpose flour
Granulated sugar
Baking powder
Fine sea salt
Buttermilk
Large egg
Unsalted butter
Vanilla extract

HOW TO MAKE BREAKFAST PIGS IN A BLANKET, STEP BY STEP:

  1. Cook the sausage per the back of the package and set aside.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a small bowl, whisk together the buttermilk, beaten egg, melted butter, and vanilla.
  4. Pour the wet into the dry mixture and stir until combined. Let sit for 5 minutes.
  5. Place a large non-stick skillet over medium heat. Once hot, spray lightly with cooking spray.
  6. Place 3 tablespoons of the batter into the hot skillet and gently spread out the batter.
  7. Cook for about 2-3 minutes until bubbles appear on top and the bottom is golden brown, flip and cook another 2-3 minutes until golden brown.
  8. Place the pancake on a plate and immediately place a sausage link in the center.
  9. Roll the pancake around a sausage link. Set it on a plate seam side down, so it stays.
  10. Repeat with the remaining batter and sausage links.
  11. Serve on a plate with syrup poured over the top, or dip in syrup in a small bowl.

HOW DO I SERVE THESE?

These can be served on a plate (how we traditionally do it in MN) with syrup poured over the top. Or they can be dipped with your hand in a small bowl of syrup.

You can also dust them with powdered sugar for another sweet touch.

CAN THESE BE MADE WITH OTHER PANCAKES?

You can use other pancakes for this recipe if you’d like, some of our favorites include:

  1. Blueberry
  2. Chocolate chip
  3. Oatmeal
  4. Banana

CAN I MAKE LARGER PANCAKES?

You can make larger pancakes and use two sausage links in the center if you want to go bigger, which is always a great option.

It depends on who you’re serving these to that can help you determine the size of your pancakes. If you’re making these for a bunch of toddlers, or younger kids (which this recipe is totally toddler approved), you may want to try smaller pancakes as they are easier for little hands to handle.

If you’re making these Breakfast Pigs in a Blanket for adults, you can use larger pancakes.

HOW TO STORE:

Keep leftovers in the refrigerator for up to 3 days in an airtight bag or container.

Or, you can freeze them for up to 3 months. Freeze them in a freezer safe container, you can flash freeze them or freeze the pancakes separately from the sausage links if desired.

Defrost in the refrigerator overnight until thawed. Reheat any leftovers in the oven to microwave until heated through.

TIPS AND TRICKS:

  • You can freeze these for later, see my tips above.
  • I like to double this recipe to make more, especially if feeding a crowd.
  • You can use flavored pancakes in this recipe by adding fruit, chocolate chips or other things to the batter.
  • Feel free to make bigger or smaller pancakes to make these with.
  • Be very careful when you roll the pancakes with the sausage, it is VERY HOT.But, you need to do this immediately, or it will be harder to roll the sausage with the pancake. Doing it while the pancake is still very hot will help it form and keep its shape.
  • Depending on the size of your skillet, you can cook multiple pancakes at the same time, saving overall time.

  • 12 cooked breakfast sausage links
